Rebecca Lewis is the founder and creator of Gramercy Eight. I’ve known Rebecca for years now and couldn’t be more excited to now be living in the same city. Formerly Los Angeles based and now in Atlanta, Rebecca is super talented and in the past year has shifted from doing fashion illustration to jewelry making. She has an amazing story of perseverance and determination which led to the beginning of her collection, Gramercy Eight. Pancakes are one of my all time favorite breakfast foods… or really any food for that matter! Any breakfast for dinner lovers out there? With the few Saturday mornings Joe & I have together at home because of his travel schedule, pancakes have become a tradition for those special weekend mornings we do have.
I love this recipe for so many reasons… the main one being, it aligns with our efforts to eliminate grains from our diet. I also love the lack of that strong desire to head back towards the sheets afterwards because you just inhaled a ton of carbs!
