With fall just around the corner, and I can’t wait for the days of cozy comfort foods. I love soups, chili’s, and anything with a piece of bread during the colder months. With Joe & I adopting the “no grains” lifestyle in our home, however, it’s been a fun challenge to replace my favorite comfort foods with healthier alternatives. This chicken pot pie is the perfect example. Chicken pot pie was one of my favorite cold winter meals growing up, and something I still enjoy today.
